Mexican Night
We just picked a whole bunch of peppers and tomatillos today and needed to use them. We ended up having a wonderful Mexican dinner of chile rellenos, rice, frijoles a la charra and tomatillo salsa.The best thing is that we were able to use tomatillos, tomatoes (for the sauce), chile peppers, and jalopeno peppers from our garden. We got onions and eggs from my Dad and we used the ground beef and bacon from the cow and pig we bought from a local farmer.
It was delicious and a whole lot of fun to make. We really enjoy trying homemade versions of our restaurant favorites (I LOVE chile rellenos.) We got the bean and tomatillo salsa recipes from this website: http://homesicktexan.blogspot.com. Everything we've tried from there has been very tasty and authentic.
Later this week we're going to try homemade Margharita pizza....tomatoes and basil from the garden and homemade mozarella and pizza crust. Mmmm. :-)
I did the same pizza on the grill a while back and it turned out great!

By the way, I should probably say we got the onions from my Dad's garden and the eggs from my Dad's chickens. He doesn't lay eggs. Or onions.
