Mexican Lasagna
The other night was leftover night for us. (Edited) was working late we were hungry after a big play date at the park. So, leftovers sounded like a quick & easy solution to our hunger problem.
(Edited) is one of those kids who either eats really well or not at all. Well, he must have played hard at the park b/c that kid ate more than I have ever seen him eat before.
I started him out w/ about some corn & 4 chicken nuggets. Before my meal was even finished reheating in the microwave, he was begging for more. So, I gave him some more & he was still begging for the food on my plate. In the end, this is what he ended up having for dinner:
8 chicken nuggets
corn
fruit cocktail
a small piece of mexican lasagna
And all washed down w/:
milk
water
juice
After a couple of hours he wanted a little snack for dessert. He finished off his power eating session w/ 2 Girl Scout shortbread cookies & more milk.
I couldn't believe it! Never has he eaten so much at one time. He's only 20 months old & that seemed like a lot for a kid his age. I can't imagine him eating like that all the time, but then again maybe that's normal. I really have nothing to compare it to.
Except, maybe, the fat kids on Maury who weigh 100 lbs at the age of 3.
