Memorial Day Weekend

I all happened on accident--I swear!

Every Memorial Day weekend our church does a Family Fun Day at the local community college and they baptize people in the pool. Because I'd been running a low grade fever for 3 days we waited until the last minute to decide to go. We also waited until the last minute to make any dinner plans for ourselves (for Monday night).

Because of the Family Day (11-3pm) and that Michelle & Eddie had been invited to an afternoon pool party, we decided late Saturday night to go ahead and pull out some ribs and chicken for Monday. The intention was that it'd be just the 5 of us. Saturday evening I mentioned it to Paul & Amanda. Monday morning I invited Karen & Tember too. Then while we were at the Family Fun day we ran into Lorenzo & Cheryl so we mentioned to them that we were eating at 6 pm and that we'd love to have them. After a stop at the grocery store we headed home where I made 2 more phone calls to invite people over. It just snow balled.

By 6 pm Monday night there were 11 adults, 4 toddlers and 1 baby at our house. We cooked 1 package of hot dogs, 5 lbs of ground beef, 2 racks of ribs and 6 chicken breasts. There was, of course, baked beans, potato salad, corn on the cob and plenty of watermelon and cantalope to go around. There were only enough left overs to feed us all (who live here) again last night--I assure you we polished it all off too!

It was amazing how everything feel together. Granted the coals ran out and we had to start all over, which caused us to eat late----but the food was great, the company was great and we all had a fantastic time. I could not have had a better gathering of people around me. (more could have been better but you get the drift)

I have learned that you CAN plan a party on accident in just a couple hours. HA! It was so worth it!
