Bacon & Benedictine sandwiches at a picnic lunch. Benedictine is a Louisville original. Sandwich spread made with cucumbers and onions. It's bright green too! YUM!

1) Never heard of Benedictine spread--sounds good. Yummy looking sandwich--even if I don't eat bacon. :)

2) Does the Benedictine have mayo in it? I love me some pringles though. Have you had the Guacamole Pringles? They are awesome!

3) These are actually tomato basil Lays Stax. They are the BOMB diggity.
Benedictine is made with only a TB of mayo. It's mostly sour cream and cream cheese.
This is the best recipe I have found online so far.

In order for it to be TRUE Benedictine though, you have to add a couple of drops of green food coloring!

4) That looks phenomenal, Betsy. Makes me want a BLT, and I want to try this Benedictine stuff.
