I thought I was being healthy
I had some left over chicken and wanted to put it into some kind of salad. I decided on a quinoa salad because it's a pretty healthy grain and I have some to use up. It has cucumbers, tomatoes, radishes, chopped chicken, feta, parsley, and cilantro. The dressing is cider vinegar, lemon juice, and olive oil. It's supposed to have olives but I ran out (used them on the boys' pizza last night). I thought it sounded pretty healthy. But then I looked at the stats and it has a ton of fat. Is it mostly from the olives and feta? And if I don't use the olives and use low fat feta, do you think it'd be dramatically better? I am going to have to type this into a recipe builder because it is REALLY yummy!!!

1) Just don't look up the fat content and you can continue on thinking you are eating healthy. Those are "healthy" fats anyway, unlinke trans fat!

3) Also remember that FAT doesn't make you FAT - bad fats clog arteries and cause liver/cholesterol issues, but good fats are fine. Depending upon any health issues you may have, it's better to do good carbs/fats and keep sugar levels low...this would be my problem. HA! Oh, and we'll take that quinoa salad recipe here on HumzOo, please. Kthanxbye.

7) That sounds delicious, especially with the cilantro thrown in ( I heart cilantro). I agree with others, those fats are healthy fats. Using the light feta in the future would make it less "fatty" though and it wouldn't lose any flavor.

8) I'm always fascinated to know now many people are aware that cilantro is usually a love or hate relationship and it is hereditary. There is a gene that dictates whether you like cilantro or not. The ones who do not usually indicate it tastes "soapy" to them.
