Got a Mama you are Bananas about?

I was going to do a photo album since there are only 4 photos but I thought I'd blog the recipe. Maybe some of you wannabe-bakers or not-crazy-about-baking-but-love-dessert-bakers or obsessed-like-me-bakers might enjoy a recipe that requires no baking, no measuring, no specialized pans (no heat--you can use your Tupperware container!). How easy is that?

As easy as it is--you will make friends and influence family. It has a "wow" factor that never fails to succeed. It's a Paula Deen recipe but it has NO BUTTER!

I usually use regular ingredients but you could make it less-fat, less-sugar with those products that can be purchased (if desired!).

Not Yo' Mama's Banana Pudding
Recipe courtesy Paula Deen:

2 bags Pepperidge Farm Chessmen cookies (I've used nearly 3 at times)
6 to 8 bananas, sliced
2 cups milk (add ½ c. milk for additional pudding)
1 (5-ounce) box instant French vanilla pudding (2-3.5 oz.)
1 (8-ounce) package cream cheese, softened
1 (14-ounce) can sweetened condensed milk
1 (12-ounce) container frozen whipped topping thawed, or 1-8 oz. container of whipped cream, whipped

Line the bottom of a 13 by 9 by 2-inch dish with 1 bag of cookies and layer bananas on top. In a bowl, combine the milk and pudding mix and blend well using a handheld electric mixer. Using another bowl, combine the cream cheese and condensed milk together and mix until smooth. Fold the whipped topping into the cream cheese mixture. Add the cream cheese mixture to the pudding mixture and stir until well blended. Pour the mixture over the cookies and bananas and cover with the remaining cookies. Refrigerate until ready to serve.

Yield: 12 servings (I think that is a little low--I serve more at work)

I bought 2-bags of the regular-sized chessmen cookies and a box of the new 100-calorie snack-bags. I usually have to break cookies to fit the pan so I figured these would be pre-broken for me. They are SO cute!

I lined the bottom with one bag and filled in with a row of minis. Then, topped those off with sliced bananas. I think I used 7. I just go by depth and stop when I'm happy with it. I use a LOT of bananas. With all the sweetness from the other ingredients, the bananas add a freshness and cut some of the sweetness. And bananas make this recipe totally healthy (well, healthier!). LOL

Then I put most of the other bag of regular chessmen cookies on the top and filled in with the minis to make it look more dramatic. Because I had a few of those left over--I just added them to the top for fun--like cookie-fetti! I also used a disposable pan from the grocery store. I bought the lasagna-depth 9x13 to allow all those banana slices. I have used my Pyrex 9x13 pan at home and domed it but I don't use the same amount of banana slices with a regular depth. Either is fine.

Happy Mother's Day to All Humzoo-Moms--maybe one of your kids will see this great recipe and make you one of these and say "Yes, My Mama's Banana Pudding" instead!

2) The cookies are a little pricey but definitely makes the recipe great instead of vanilla wafers (and I'm a big fan of that version too!) Hope you enjoy it!

5) Hey Courtney, Just a little banana info, put those bananas in the fridge at the point you want them to remain. The outside will turn dark but the inside will stay the same..... at least for a few days. Love, Rose

6) You can also freeze them right in the peel. When you thaw them they will already be mushy and ready for a banana bread or some muffins or cake!

11) Not so much raises but my co-workers really work with me well. Probably has nothing to do with me paying them off in cookies. NOT that they ask for them or expect them--but they rarely say no to a batch of cookies.

This past week I baked one batch of cookies, 4 cakes and a banana pudding.

This coming week is a special birthday so it has to be a "wow" treat and another treat for a departing co-worker and friend and another batch of cookies to ship and another batch to send to our satellite data center and maybe a treat for the folks at week's end. And people seem to think I need to go into business to bake more! :)

13) I took one like it to a Christmas Eve party this year. It was well-received. I thought with all the heavier, winter-type desserts it would be a change. People loved it and even those who wanted to skip dessert because they were full had to get a small bowl because everyone kept raving over it. We tend to think of banana pudding with summer and cookouts but it works well any time of the year. I hope you have fun with it and share your experiences too! :)
