Tonight I chopped 3+ pounds of bittersweet chocolate to have ready for any chocolate recipes. I dislike having to stop and prep ingredients when I'm ready to bake. Some ingredients can't be done in advance but chocolate can easily be readied ahead of time. If you ever need great baking chocolate for a decent price, check out Trader Joe's (if you are lucky enough to have one!). There is no comparison with the lower quality (and generally higher priced!) baking chocolate found in most grocery stores.

1) I learned the hard way. Prepping is truly invaluable when it comes to any kind of cooking. I used to try to chop, cut and measure everything as I went but timing never worked out in the end. Not that it does today but its better off because I prep the ingredients before hand.

4) LOL...it is very good eating chocolate as well--but right now I'm contemplating apples. I found some wonderful Empire apples at the last farmers market of the season. Decisions, decisions...so many apple recipes to choose from. :)
