Five guys in my office got their walking papers a month ago. Their last day is Friday. I've been baking each a treat of his choice. The "king of treats", Ethan, who usually is the most vocal (and perhaps the craziest!) asked for a "Last Hurrah" cake. A rum cake...light on the cake, heavy on the rum for their last day (I hear they are going out for a drink after work--hope none of them are driving later!)
I did my best to put as much rum as I could safely (and tastily) put in their cake. I'm told it's better the next day so I'm making it tonight for Friday. I changed out the water in the recipe with 1/2 light milk and 1/2 dark rum.
After it baked, I made a "hot buttered rum" sauce that is supposed to be poured over the cake in the pan but I thought it would be prettier this way to keep the shine. Took a little longer but I got it all soaked in and glazed on the cake.

1) Pretty good, Linda! You can pour the sauce and take a picture all at the same time!!
2) It wasn't easy--took about 10 tries. Either the sauce wobbled or the photo did. LOL
3) I can tell you all, it turned out wonderfully! Thanks again, Linda for your continued support :) I'll miss working with you for sure, and NOT just for the treats!
