Yesterday was the last day of the farmers market. Definitely the sign summer is over and fall has arrived. I always try to make both the opening and closing day--for tradition. Amazingly a few booths still had berries but my eyes were only for apples. I sampled many different types (a tough task...but I managed) and finally settled on a variety I hadn't tried before - Empire apples. They were touted as a great baking apple that didn't brown easily. For the unaware, apples and pears oxidize quickly when cut and will turn brown without the addition of some acid like lemon juice to slow it down. As advertised, these apples didn't get brown after cut and went into the cake snowy in color. Here is the cake after baking...but it's not done yet.

1) Empires are a favorite of mine. They are right up there with Granny Smith, although completely different in taste.

2) I agree. New for me but I'm sure not new for others. I will miss the market for choice and learning. :)
