Finally got around to making my knock-off Samoa cookies. More labor-intensive than my usual cookie. You were "supposed" to roll them out and cut them in circles but we all know how I feel about cutout cookies. Instead I rolled mine into a log and let it sit for a bit and then sliced 1/4 in. slices. Mine aren't as perfectly round without the rolling and cutting but hopefully they will eat as well and retain some character.
