When my sister (Gigi) visited, she made us a delicious veggie dish with eggplant, sweet peppers, sweet onion and some curry sauce, mango chutney and curry powder. It was so good I asked for the recipe. I'm no cook and really don't like doing it at all but this one was easy enough even for a non-cook. Sis...hope I did you proud with the one I made last night for my lunch today. Felt a little odd cooking right before bed and putting it in the fridge for lunch today but I knew the dish only got better with age and I wouldn't have time to make it while working from home today. I added some brown rice and had a very tasty and satisfying meal! Thanks for the recipe, Sis!!

It's my sister's recipe--but I don't think she'll mind me posting what she sent me. Super easy. I'm sure if you wanted to add meat you could but it's perfect without it. :)


Rose’s Veggie Curry Dish

1 eggplant, peeled and cubed,
2 sweet peppers, red & yellow or orange but green will work
1 sweet onion, chopped coarsely, Vidalia if you have it.

Chop the peppers in chunks. You just sauté these ingredients in 2-3 T of EVOO, it is Rachel Rays recipe. When they are crisp, tender, add the Mango Chutney and the Curry Paste or what I used will be fine. Add 1 teaspoon curry powder. You should have the curry paste and the chutney left from when I made the dish. You use a half a jar of each in the recipe. Just blend the flavors and cook as long as you wish on very low heat, I like my veggies a little crisp not totally cooked to death.

She had a little trouble finding exactly what she wanted. She was looking for a curry paste that we couldn't find. We settled on Thai Green Curry Simmer Sauce and Mango-Ginger Chutney purchased at Trader Joe's. That's what I used in mine (the leftover she mentioned). The curry powder was also purchased at TJ's.
