I rarely bake for myself--it's always for someone else. This morning I baked muffins for me. I hoarded the last box of local fresh blueberries to make blueberry muffins. I changed out the flour with all white whole wheat flour and added an extra 1/4 t. of baking powder to help with the heavier flour to keep them light. I changed out the refined sugar with some organic raw sugar--nearly used agave nectar but decided to go with the sugar. I don't like muffins in liners--I like the crunch of the sides so I seasoned the pan and baked them until golden brown. I turned them on their side to cool and avoid soggy bottoms. I will miss the Oregon blueberries (at least fresh) until next season.

I agree about liners--ick! I love crunch and soft together--like in a muffin!
These look just delicious; blueberry muffins are my favorite!

I know what you mean. Steve and I had our last batch of homemade blueberry muffins a few weeks ago. Even then the blueberries were starting to get sour. I froze some good ones this summer and will make muffins with them in the winter. I think they taste as good as summer muffins!

I think frozen are good but psychologically I don't feel they are AS good as fresh. I'm sure it is all in my mind. LOL

I have frozen "fresh" berries from last year. I should use them up while I can... hmm.... fresh muffins.... oh yeah!
