What I like about the carrier is it is collapsible. You can carry 24 cupcakes well-decorated and they are spaced to pick them up without hitting the other ones and stack to minimize the size of the container. When you are done, the feet fold under the top shelf and the top folds down on itself. It snaps to the bottom for a secure carrier with a sturdy handle. Bed, Bath & Beyond now stock this carrier.

They look beautiful and I like the carrier too. I got one for my sister about two years ago for her birthday because she likes to bake cupcakes and then take them to work. I need one to have on hand.

What a beautiful gift for your librarians! I know they appreciated these yummy cupcakes!

I got a hug from Janet. :) She's part of the reason I started. We chatted about baking once when I was checking out some cookbooks and I told her I had wanted to bake for them but didn't know if there would be health restrictions about it. She happily said no and that she loved chocolate and if I was going to do it anyway...she'd be working on Saturday in a few weeks. LOL

They are the nicest people and love to get treats. Hope the coconut doesn't discourage anyone.

Trader Joe's got the last of the Triple Threat Dark Chocolate Cookies. I did tell them about the pecan pieces (bought at TJs) for any nut haters or allergies. Hope they enjoyed theirs too.

Where did this carrier come from? I'm so jealous!
These look just delicious, as usual!

Cupcakes were a big hit with the librarians and they took great care of my carrier until I picked it up. Now, they have a trifle bowl. It definitely saves on disposable pans and boxes purchased for presentation and toting things there. It's nice to know someone appreciates it enough to make sure you get your stuff back--unless their ulterior motive is to get it filled again...mmmm.

I highly recommend the recipe. It was easy to do and apparently was thoroughly enjoyed by all (except maybe a few coconut haters). Most people who don't like coconut dislike it for the stringy effect. For these cupcakes you chop the coconut finely so the cupcake bite is clean but you get all that moisture and flavor from it. If you are really adverse to coconut you might try mini chocolate chips--I'll bet they would be a great option and keep the moisture in them like "little puddles of chocolate" as my co-worker likes to say.

Ashley, if I didn't say, Bed, Bath&Beyond carries this carrier now. Use that 20% coupon and get it for $6 less! I'm bartering for coupons now. I just need to get more gift cards accumulated with Discover to use them and avoid using any $$ for purchases. :)
