Always a Girlscout.

I've been craving something dessert-y. I figured I'd make some cupcakes since Dave invited Shoo and me over tonight for an election party; that way we wouldn't have dozens of cupcakes just sitting around being tempting. Well, I buy the mix and frosting. (I won't even tell you how I was planning to decorate them this time, as I'll still make them at some point this week.) I get home and start to get all the ingredients out. Unfortunately, I was in for some serious disappointment when I opened my carton of eggs. I was one short.
I sat for a while debating whether or not to go back out and get more eggs or just sit and crave something sweet. I started riffling through my cabinets to see what I could scrape together. I had chocolate, peanut butter, marshmallows, and bananas. Perfect. Banana boats...you know the bananas filled with all that good stuff that makes them not fruit anymore?

Now, granted, I don't have a campfire in my living room, so I had to get a bit creative. But my babysitter used to make these for us on rainy days using the same method, just in the oven. I honestly couldn't tell you what temp. she had the oven on. I've got it set to 300 to keep anything from scorching.

I was going to take one before I pulled it out of its peel, but I just couldn't help myself. It looked so unbelievably good.

It was just as good as I remember it.

1) FIESTAWARE!!!! I LOVE love love my fiestaware!!! :) (it was my college graduation present to myself!!)

I have cereal bowls in that color.

3) Just in case it happens again, there are lots of options to replace a small number of eggs in a recipe. Here are a few I saw on a quick Google search:

• 1 egg = 2 Tbsp. potato starch
• 1 egg = 1/4 cup mashed potatoes
• 1 egg = 1/4 cup canned pumpkin or squash
• 1 egg = 1/4 cup puréed prunes
• 1 egg = 2 Tbsp. water + 1 Tbsp. oil + 2 tsp. baking powder
• 1 egg = 1 Tbsp. ground flax seed simmered in 3 Tbsp. water
• 2 tablespoons of cornstarch beaten with 2 tablespoons of water. This, too, works much like vegetarian egg replacer.

Just some ideas when you are in a pinch. I have a box of egg replacement I bought years ago for vegan recipes. When I run short I just grab an "egg" from that and add it. Since it is dry it has a very long shelf life--it's just starch to add to water for a binder. You couldn't do it for too many eggs or for something like an angel food cake that relies on the egg for volume but cookies or a cake with enough structure and a few eggs would work. :)

4) Those look so yummy. Is that chocoalte chips I see in the middle? I am waaaay too lazy to be as creative as you are. I would have settled for a handful of chocolate chips...then another...then another...oops bag empty :(

5) Bananas and PB or bananas and chocolate are just made to work together! Oats too. I love all those in various ways. Your creativity was inspired. Can't wait to see the mystery cupcakes later!
