The caramel apple cookies turned out really well!! I made them last weekend. I didn't get to eat very many though because of my root canal.

1) I'm glad yours did--mine were less than successful. I couldn't find the caramel bites. I tried a substitution--maybe that created the problem. Glad yours turned out!!

2) The only problem I had was that they stuck to the pan because I didn't have any parchment paper. Next time I'm going to try butterscotch chips instead of caramel and fewer apples. Mine didn't hold together as well because I added extra apple to the recipe. They tasted good, but they were crumbly.

3) I had the opposite problem--mine held together fine but they were too soft and "blew out" on the pan, I tried adding more oatmeal (not ground) and that helped but not enough. I started to add more oat flour but just stopped, put the unbaked ones back in the bowl and tossed it in the fridge. Yesterday I took that out, ground the baked cookies with the caramel "wings" (I have no problem with sticking since I use Silpat liners), added those ground cookies back to the dough, added one more apple and pressed the dough into a 9x13 pan. Baked it then poured homemade caramel sauce all over the top and let it soak in. I cut the bars up today. They were chewy and oatmeal-y and sticky-gooey with caramel but they tasted good. I took them to the librarians this afternoon. Hopefully they will enjoy them today and tomorrow. I like the idea of apples and caramel but I didn't think the cookie held up to the baking. Maybe it was the overwarm day and kitchen or maybe my substitute for the caramel bites I couldn't find. Whatever, they didn't work for me. If I ever see the caramel bites I will try again. Otherwise, I might make the recipe and bake it as a bar instead of a cookie.
