Variation on a theme-Humzoo's Banana Pudding

I was inspired by Linda's great Banana Pudding recipe but needed something a little less sugary so I made a few substitutions and viola , a lower calorie version:>

I used sugar free/fat free jello, 1% milk, Neufchatel cheese, light whipped topping and Murray Shortbread (baby cookies.) It turned out really good. I would like to do something about the swetened condensed milk-I know there is a fat free version but the sugar is really what I am trying to reduce. I was having company so I was afraid to improrvise too much.

I also layered it more in oreder to get more bananas in it and had to get a little creative with a familiar logo.

It was a great success and know I think I have our favorite banana puding recipe.

2) Love the design and the inspiration to improve on a recipe! I have used a cooked pudding and melted the cream cheese in it, adding a bit of raw sugar. You could use a sugar-free cooked pudding, and your low-fat cream cheese and added brown sugar (or if you want, the Splenda Baking Brown Sugar (though I really don't add that much) as an alternative to the sweetened condensed milk and instant pudding option. Might give you some ideas to lessen the sugar as you wanted. :)

3) Thanks-I'll try that next time. I forgot to point out that the cookies are sugar free too.

6) This was a fun one getting to celebrate with Fletcher and Talina who just told us that they will be contributing to our grandkid count in Jan. Very early-too soonto tell- but they said "little Richard" is definitely a name possibility:>
